Shrimp Avocado Salad
We really like shrimp :-), they are easy and fast to make, ideal for every season, simple for a family dinner and ready to impress when you have guest! Today I fell a little nostalgic, missing the hot and sunny summer days. Here in the country side of northern Italy is starting to get pretty cold, something I almost forgot by living is Southern California for so long. So when a warmer fall day come along I take the opportunity right away to cook something summerish 🙂

Shrimp avocado salad bring to my home the So Cal taste! So many memories about those years leaving by the ocean. Dress this salad with lemon and extra virgin olive oil. Honestly in these days is my go to dressing for every salad, and a really perfect match for this one.

- Shrimp 1 lb
- Lettuce 1 stump
- Tomatoes 2 roma
- Zucchini 2
- Avocado 1
- Lemon 1
- Olive Oil 3 tbsp
- Salt
- Pepper
- Cook the shrimps in a big enough pot of hot water for about 5 to 10 minutes depending on the size
- When they are cook drain them and set aside
- In the mean time wash the zucchini and cut them in 1/4 inch slices
- Dress them with 1 tbsp of olive oil
- Using a grill or a grilling pan cook them until grill marks appears, about 5 minutes on each side
- Wash and cut lettuce and tomatoes
- Open and slice the avocado
- Remove the shell from the shrimp
- Assemble the salad in a big bowl
- Squeeze the juice out of the lemon
- In a little bowl mix together lemon juice olive oil salt and pepper
- Dress the salad and enjoy 🙂
