Can you believe there is a full month dedicated to grilled cheese? Yes, and April is it :-)! We decided to honor it with a delicious and malty grilled three-cheese sandwich, a great American classic! There is nobody who doesn’t like a well made cheese sandwich, first of all because it taste really good, and second because it bring back memories of happy childhood moments. This is a simple food, made only from few ingredients. It became very popular during the Great Depression of the 1920s for its low cost and its satiate properties. The cheese sandwich remains with the American tradition and today is popular worldwide; it’s served in many restaurants, enjoyed by him self or paired with soup and salad.

For us the cheese sandwich has been a new discovery, one that we learned to love right away. Roberto is the cheese expert of our family. He was in charge of choosing the right cheeses for this recipe and he took advantage of this opportunity buying as many cheeses as possible. He had the perfect excuse of tasting all of them to discover the best combination. I have to admit that even if the all story made me laugh he really did a good job. He ended up choosing: sharp cheddar, soft fontina and a hard buffalo milk cheese. Honestly you can use any kind of cheese you prefer for this recipe but we really liked this combination and I hope you will enjoy it as well 🙂
