I know, it’s been a while since the last time I posted a recipe, I will not get into the details about it right now, I will explain everything in another post in the near future. Today I’m here to present you a delicious Farro Spring Salad. The days are getting longer and the temperature it’s nicely warm, so like the weather our food is changing. We are eating lighter and fresher meal, and most of them are enjoyed outside in our garden. I really like Farro, it’s a tasty and nutrient grain, for us it’s a very good alternative to rice and it can be used in many ways.

Today I putted together a very easy recipe, it take just a few minutes to chop and assemble, it is ideal for a light dinner or bring it with you to work for a fast lunch break, although my personal favorite use is to take it with you on a pick-nic, maybe a concert on the beach or a movie night in the park.

Farro is one of the oldest grain farmed by man, is very popular in Italy and all around the Mediterranean sea. It’s characterized by its nutty flavor and it goes great with spring and summer vegetables. I this recipe I used cherry tomatoes, Taggiasca olives from Liguria, mozzarella cheese, canned tuna and fresh parsley. Feel free to add your favorite dressing I simply used extra virgin olive oil and salt.
