Pumpkins Food in Pixels

Pumpkins season is here, and we love them, we like to buy a lot of the little ones to decorate the entire apartment, they bring joy in the air and they make us smile every time I look at them πŸ™‚ ! Baby pumpkins are not only cheerful and good looking but also a great ingredient for many recipes. When we first moved here from Italy we left everything we owned there, we arrived with only 2 suitcases and the only kitchen utensils we had were 2 sets of silverware, 2 table mat and 2 napkins, everything hold in a nice yellow fabric envelope my mom gave to me when I left for college! So even after 5 years we are still building our perfect kitchen with appliances little by little. My friend Natasha, who knows me very well, for my past birthday, got me a beautiful hand mixer and this can only mean that this season will be filled with delicious soups and since pumpkins are everywhere at the moment we decided to start our soup series with an easy and delicious pumpkin soup!

Easy and Delicious Pumpkin Soup
  • 1 lb Pumpkin
  • 1 Onion
  • 1 steam celery
  • 1 carrot
  • 2 tbsp extra virgin olive oil
  • 2 cups of water
  • sour cream and parsley (just a little bit for decoration)
  • salt and pepper
  1. bake the pumpkin in the oven for about 40 minutes at 400ΒΊ F
  2. in the mean time thinly chop onion, celery and carrot
  3. fry them until browning in a big pot
  4. when the pumping is ready and cool down a little, peel it, empty the inside and cut in 1" chunks
  5. add the chunks to the pot, cook for 5 minutes and add water
  6. cook for about one hour adding extra water little by little if necessary and steering frequantly
  7. blend everything with the hand mixer and enjoy warm πŸ™‚
