Radicchio is my absolute favorite kind of lettuce. I think that it looks sexy and reminds me of curly hair with a vibrant color and a unique bitter personality!

I happily discovered that radicchio is originally from Italy and curiously is the different varieties take their name from the Italian regions they are from.

I like it in a simple salad, just by itself with a dressing of extra virgin olive oil and balsamic vinegar. Honestly, I can eat it every day! On the other hand Roberto prefers radicchio grilled – a simple recipe. When grilled the bitterness of the radicchio starts to fade away.

Last but not least eat radicchio at dinnertime – it’s a magical aid for insomnia due to its light sedative content.
