My grandfather was a big fan of little snacks like this. Oh, wait a second! Not exactly like this one because in Italy we didn’t have avocados until a few years ago and even the ones you can find now are nothing like the ones I have eaten here – soft, fresh and heavenly creamy.
So back to my grandfather – he just loved to cook and when he had us over for dinner he welcomed us with quite a variety of little canapé, each one of them held together by a little toothpick and made with different ingredients.
Here I used very basic ingredients: a slice of Roma tomato and a Greek olive, previously marinated in red wine and herbs, on a multigrain slice of bread. Instead of olive oil or a sauce I used a slice of fresh avocado that I think improves the canapé in appearance and taste.
