Brown Butter and Cornmeal Baby Scallops over Rice
  • ¾ lb Baby Scallops
  • 2 cups Rice
  • 2 tbsp Butter
  • 2 tbsp Cornmeal
  • Parsley
  • Salt & Pepper
  1. boil the rice as indicated on its package
  2. in a frying pan melt the butter
  3. when it turn brown add the cornmeal and cook for 2 minutes
  4. add the baby scallops and cook for 5 minutes or until browning
  5. add salt, pepper and fresh parsley
  6. serve hot over a generous amount of rice
