A few weeks ago we met Giuseppe Gentile, a young Italian Chef based in Los Angeles. He is the commander in chief in the kitchen at Pizzeria Il Fico. He prepared for us a very interesting dish: a hand-made pasta with mussels and eggplants.
For the pasta Giuseppe used a particular grain called “Grano Aspro”, it’s a black kind originally from Italy. The sauce was made from fresh tomatoes, mussels and diced eggplant. The black linguine cooked a little bit in boiling water and was finished with the sauce. Everything was beautifully served on a white plate and garnished with roasted breadcrumbs. A really interesting experience: familiar flavors mixed together in a new combination, something I never tried before.
This recipe was wonderful, but Il Fico is also famous for their wood oven pizza, the real deal! Roberto and I have been looking for authentic Italian pizza for years so you can imagine our joy when we try the pizza from this restaurant. Thin crust, light dressing and genuine taste, we were in love at the first bite 🙂
