I always loved eating salad, and growing up my only dressing, for every kind of salad was olive oil and salt. It also had to be said that I mostly eat simple green salad. When I met Roberto he was the one that introduced me to the pleasure of mixing ingredients. Little by little, it took him years, starting from the simplest ingredients, working his way to the top of a nice and rich mixed salad.

When we first moved to the US back in 2009 I was so scared of trying new things, I use to carry around my own olive oil bottle every time we went out for dinner. I did try a few dressing, in big chain restaurants and I was disgusted, they tasted like chemicals and they completely covered the taste of my lettuce. I thought I never want to repeat the experience, but a few years later I discovered that not all salad dressing come from a taste-less mass production, there are so many herbs and veggie that can be mixed together and give you the most amazing taste result. Also thanks to my dear friend Natasha, a brilliant chef, who shared with me many dressing secrets now I love them. Sweet onion are a great dressing ingredients, delicate flavor, great on his own, but at its best with a pinch of salt. This is a very versatile dressing, that goes well with many kind of salad, my personal favorite is to combine it with a meaty salad, with steak or chicken, but be creative and please leave a comment letting me know with which salad you tried it!

Ingredients
  1. Sweet Onions 3
  2. Dijon Mustard 3 tbsp
  3. Agave 1 tbsp
  4. Lemon Juice 1 tbsp
  5. Olive Oil 1/2 cup
  6. Corn Starch 1 tsp
  7. Paprika 1 tsp
  8. Salt 1 tsp
  9. Rosemary 1 tbsp
Add ingredients to shopping list

Instructions
  1. Chop the onions
  2. Add all the ingredients in a blender
  3. Blend at high speed for 1 minute
  4. Transfer to a container and serve or refrigerate for later
