Happy Valentine’s day! Roberto and I use to be very busy for Valentine, owning a chocolate shop, it was the craziest day of the year. We use to work very late, customers kept arriving until 10 or 11 pm. At the end of the day we were so exhausted, we just wanted to lay down and go to bed. So celebrating wasn’t for us.

Now things are different, our job is not Holiday related anymore, we have Matteo and we are surrounded by family!

Matteo and I spent the day in the kitchen making little Valentine’s gifts for the all our loved ones. He loves to be busy and do stuff with his hands, he is adorable with his little apron πŸ™‚

When he was done working in our new photography studio Roberto joined us in the kitchen and we prepare this amazing Valentine meal all together.

We prepared a classic risotto, Roberto made his special meat roll and we added simple peas to complete the plate. Assembling the meat roll will require a little bit of your time, but when that is done you can cook everything at the same time in about 30/40 minutes.

Ingredients
  1. Risotto Rice 1 lb
  2. Onion 1
  3. Butter 4 oz
  4. Olive Oil 4 tbsp
  5. White Wine 1 cup
  6. Meat Stock 5 cups
  7. Frozen Peas Β½ lb
  8. Pork Loin 12 thin slices
  9. Ham 12 slices
  10. Cheese 6 slices
  11. Sage 4 leaves
  12. Pepper a pinch

RISOTTO
- melt 1 oz of butter and 2 tbsp of olive oil in a large pan
- add the finely chopped onion and sautΓ© until soft
- add the rice and toast it for a few minutes
- add Β½ cup of wine
- when evaporated start adding the stock a little bit at the time (save Β½ cup for the peas)
- stir frequently until the rice is ready, about 20 minutes
- turn off the fire and add 1 oz of butter and let it melt
PEAS
- melt 1 oz of butter in a small pan
- add the frozen peas
- after a few minutes add Β½ cup of stock and cook until the peas are ready (15/20 minutes)
MEAT ROLLS
- lay your pork loin slices on a wooden board
- lay over it a slice of ham and half slice of cheese
- roll up the slice and secure it with a toothpick
- in a large pan melt 1 oz of butter and 2 tbsp of olive oil with the sage leaves
- cook on a high flame for 10 minutes on one side
- turn them around and cook for 10 more minutes on a medium flame
- add Β½ cup of wine
- turn the flame to a low heat and cook for 20 minutes turning them every ones in a while
  1. Compose your plate with risotto at the bottom, peas and meat rolls on top.
